When it comes to Danish whisky, I have to thank Thomas of Fary Lochan for some of my best discoveries. Among others, he was the one who first pointed me towards Thy Whisky. And he was also the one who introduced me to Sall Whisky – an organic micro distillery located about 75 minutes by car north of Fary Lochan. As with Thy, whom I checked out almost immediately after Thomas had told me about them, his words of praise also made me pretty curious about Sall. However, due to the fact that their bottles are not yet available here in Germany, it took a bit until I finally got to try my first dram of Sall. As fate would have it, my first two attempts to visit them on site fell through because of last-minute plan changes. But then I finally got to meet the super-friendly Sall team at Bottle Market in Bremen in November, where they proudly and happily showcased their superb spirit to the North-German dramming community. Eager to finally try some Sall, I tasted pretty much everything they had on display. And in the end, I also took two full bottles home: the Islay Cask Finish and the Inaugural Release! I’m especially happy about the latter, because I don’t think that – despite the comparatively high number – you’ll still find too many of the 1,295 bottles out in the open. Plus: This bright and fruity and heavy-on-crops Danish Single Malt Whisky with a full ex-Bourbon cask maturation strikes all the right notes with me! Even before I took the first sip, I knew just from the sniffing that I would absolutely adore Sall’s Inaugural Release; and when I finally tasted it, swallowed it, and listened to its echo, the whisky did exactly what I hoped it would do: It blew me away!

Eye: Yellow straw.
Nose: Sall Whisky’s clear and clean Inaugural Release starts off with a most beautiful bouquet. The offered scents are as bright and pleasing as a summer’s breeze: Sun-kissed grain and crisp barley sugar go first, purreed apple and juicy peach follow after. Furthermore, the dram also has a lovely creaminess that appears in the form of maracuja-flavored yogurt and runny vanilla sauce. And last but not least, I get a spritzer of citrus, a bite of grape, and a spoonful of cookie dough.
Palate: Sweet, fruity, and grain-forward. Elegant, well-balanced, and savory … and simply great! Similar to the smells, the leading flavors are all of a light n’ bright nature, too: breakfast cereals, banana milk, lemon zest, apple compote, pineapple juice, and confectioner’s sugar sprinkled upon fluffy white-chocolate muffin. Also marzipan and sultanas. The overproof ABV of 52.2 per cent gives the expertly crafted spirit a good body and stature, and transports the delicate flavors super-well!
Finish: The aptly orchestrated aftertaste goes on for a bit. It emphasizes on yellow plums, peaches, grapes, apples, and jellied lemon slices as well as honey cake, sunflower kernel, and whipped cream. My final verdict: This Organic Danish Single Malt Whisky is a near-perfect embodiment of the often cited “Sunshine in the glass”!
