Originally, Noah’s Mill Bourbon was recommended to me by the barkeeper of one of my favorite drinking joints in town, The Rabbithole. As he is a cool dude who definitely knows his spirits, I followed up on his advice and scored a bottle of Noah’s Mill at the next given opportunity. Lucky me! From the first sip, the pour’s astonishing depth and complexity fully won me over. It is creamy, spicy, dusty, woody, just a tad sweetish and full on amazing! While Noah’s Mill apparently got bottled with a stated age of 15 years in the past, it now hits the shelves without an age statement. But don’t let this fool you: This high-strength American whiskey certainly was granted all the time it needed to unfold its enormous potential. Glass by glass, it has emerged to become one of my most beloved bourbons and it is hard to imagine my whiskey shelf without a bottle of Noah’s Mill anymore.
Eye: Reddish leather.
Nose: This whiskey has “Wild, wild west” written all over it. Besides the traditional bourbon notes of wax and corn, there is wood, straw, honey, herbs and dust. Sun-dried apricots and papayas add a fruity and somewhat exotic component.
Palate: Really complex and fingerlicking good. The strong ABV – this fella brings no less than 114.3 proof to the table – is perfectly integrated and the different notes are well-balanced. Although there is no age stated on the bottle, you can tell from the spirit’s smoothness that it was granted quite a lengthy sleep. The dominating flavors include vanilla, oatcake, leather and spices. Also sunflower seeds and dried fruits.
Finish: Long-lasting and fully focused, this bourbon’s creamy finish is the liquid equivalent to that endless build-up before the final duel in a Sergio Leone movie.
