If you read my blog regularly, you will know that I have developed quite a fondness of Danish whisky in the last few years. Consequently, I am always eager to check out new whiskies from this country. My latest discovery of such nature is Thy Whisky, which is made at a family-owned farm distillery located in the very north of Denmark. I first heard the name in mid-2021 during a visit to another Danish production site, namely Fary Lochan. As I was sharing a dram with Thomas from the distillery team, he told me about a local brand that had gotten lots of praise and recognition lately: Thy Whisky. About half a year later, I finally got the chance to try the much-lauded spirit myself. When I found the richly sherried “No. 15 – Fjordboen” on sale at a local mailorder called Din Lille Butik, I thought to myself: “Go and get it!” Shortly after, two bottles arrived at my home, one of which I opened straight away. After all, I wanted to taste this organically sourced, bio-certified single malt better soon than late. Since then, I have had quite a few drams, both alone and with friends. And everytime I poured me a glass of “No. 15 – Fjordboen”, joy and relish followed right after. This whisky – though only three years old – has a ton to offer: great taste, unique character, excellent craftmanship, and a leveled yet vivid temper!

Eye: Bronze n’ gold.
Nose: Inititally, there is a strong vinous note that is both delicate and sweet. It remains predominant – even when you give the whisky lots of time to breathe. Once it has gotten some air, however, this dapper Danish dram’s bouquet further unfolds. Now, there are also raisins, spices, and gingerbread crumbles. Plus a drop of golden honey and a spoonful of powdered cinnamon.
Mouth: Clear and clean, but also flamboyant and piercing. On the tongue, a rush of sherry mingles with plum, grape, pear, and blueberry. Also cocoa powder, apricot chips, and keshew kernel. As the spirit bellows from one side of the mouth to the other, it develops an exciting dynamics: from over-sweet to slightly salty; from dry-ish to ginger-sharp; from mellow to mouth-coating.
Finish: The lasting aftertaste is pleasing in taste and rich in variety. It has candied ginger, squashed grape, crumbly fudge, fruit-filled flake pastry, and flavored trail mix.
